"Ribel"

The traditional "Ribel", a dish made from corn flour, used to be a staple food.

"Ribel", also known as "Rebl", is one of Liechtenstein's most traditional dishes and has a long tradition. Originally, this nutritious dish made from "Türggamehl" (maize flour) was a staple food for farming families and less affluent people. Until around 1970, "Ribel" was eaten regularly and often several times a day, especially in difficult economic times. Today, "Ribel" " is a valued culinary specialty.


Ingredients:

approx. 600 g "Türggamehl" (corn flour)
1 l Milk and water (half milk, half water)
1 TSP Salt
1-2 TABLESPOONS Butter and vegetable fat


Preparation:

Pour 1/3 water, 2/3 milk, a pinch of salt, a little butter or vegetable fat into a deep frying pan or cast iron pan, bring everything to the boil and then pour in the prepared corn flour, stir everything and leave the mixture to simmer, covered, for about 15 minutes next to the stove.

Now toast the "Ribel" " in the same pan with enough butter until it is crumbly. You can also use half corn flour and half wheat semolina.

"Ribel" is traditionally served with coffee with milk, apple sauce, elderberry sauce, apple slices, all kinds of stewed fruit or sour cheese.
